FROM THE EARTH TO THE DISH

Only in magic earths as the Apulian one, the run can be so short: from the EARTH to the DISH. The only country in the world, from Gargano to Salento, from Murgia to the Itria Valley, in any other part of the globe, earth has been able to give so much to the man in so little space.
From the wines to the cheeses, from the fruit to the vegetable, from the fish to the meat, but… the Wheat, that one, is really inimitable. As it grows in Puglia it doesn't grows in any other country in the world, in any other sets to the world the microclimate is him more propitious, the warm sun and the fresh winds of mistral, coming from the sea and from Murgia, they give that slow growth and that golden color, a wheat with the Apulian taste.
We come from here, we are those people who plant the fields, grind the wheat, produce the pasta, enshrining the territory and ancient traditions. We produce the durum wheat for more than three generations, using clean and safe technologies, respectful of a tradition that, as heirs, we want to maintain intact in the years, also squeezing an eye to the new production techniques, turned to the intelligent exploitation of the ground and in the best echo-friendly way, as well as to low environmental impact.
To grow wheat for us doesn't mean to get a product to bring in the global market, more and more ruled by the binomial low costs and maximum profit, on the contrary it means to try to produce a raw material for rediscovering ancient tastes by now forgotten.
We grind with innovative structures, only seven steps, that allow to extract the heart of every grain of wheat, leaving the rest as discard and always maintaining very low temperatures; this is the real strong point to preserve the authentic and natural taste of our wheat. We make pasta as tradition describes, with bronze drawing and slow drying up, always with low temperatures and extra-pure waters of Murgia.
In conclusion, the result of this controlled process of production, that we call “filiera chiusa”, is a pasta with an unmistakable taste; the only kind one we can define Pasta 100% Made in Puglia, producted without all the intermediary steps between producer and consumer, from the Earth to the Dish.
