FISH SOUP FROM APULIA

INGREDIENTS:
- 500 g of mussels
- 500 g of veracious clams
- 500 g of tellin
- 800 g of shrimps
- 500 g tomato flesh
- 1 clove of garlic
- 1 onion
- 2 salty anchovies
- 1 small bundle of parsley
- 1 dl of dry white wine
- housemade bread
- 1 dl oilve oil
- salt
- pepper
PREPARATION:
Scrape off and rinse the mussels, the clams and the tellins changing more times the water. Pour the oil in a terracotta saucepan and make fade the peeled garlic. When the seasoning will be well perfumed, remove the garlic and add the onion, husked and coarsely minced, and the anchovies, cleaned by the salt of maintenance.
Add the parsley, husked and minced, wet with the wine and perfumed generously of pepper. Make to slightly reduce the wine, therefore put in the saucepan the mussels, the clams and the tellins.
Leave to cook on hot fire, shaking now and then the saucepan so that every shell will open; take away the shells closet yet.
Wash as well the shrimps, changing more times the water, therefore pour them in the saucepan with the molluscs and cook for 5 minutes. Added also the tomato flesh, salt and pepper, bring to boil and continue the cooking for other 30 minutes. Before you serve in table, distribute the soup in the individual dishes and complete with slices of rustic bread.
