ROASTED EEL

INGREDIENTS:
- 1 Kg of “Capitone” (eel)
- Laurel as you like
- Salt as you like
PREPARATION:
Clean the eels leaving the skin and cut them in pieces of 6 cms. Pierce the pieces of eel in skewers alternating them with the laurel.
Put the skewers on grill of the oven, warmed to 250 degrees setting below the oven plate a water finger. Cook for 25 minutes rotating the skewers to intervals of about 5 minutes.
Salt when you serve on table.
