ROASTED LAMB WITH LAMPASCIONI, MUSHROOMS AND POTATOES

INGREDIENTS:
- 1 kg of lamb in pieces;
- 300 g of cardoncelli mushrooms;
- 300 g of lampascioni;
- 1 kg of potatoes;
- 1 onion;
- Extra-virgin olive oil;
- 10 little tomatoes;
- parsley;
- pecorino cheese;
- salt as you like.
PREPARATION:
Cut the lamb in pieces. In a clay saucepan, put a thread of oil, the lamb, the potatoes done to pieces, the mushrooms (previously washed and cut) and the washed lampascioni and engraved with a cross in the part of the root. Add some leaves of parsley, salt, red pepper, pecorino cheese. Cover the whole food with some water and crumb and bake for 20/30 minutes to 200°.
