Pasta of durum wheat semolina. Worked and dried with “Delicate Method”.

In 1918, with the patrimony of experiences inherited by his Father, Benedict Cavalieri inaugurated the "Molino and Pastificio Benedetto Cavalieri" thought expressly to produce pasta of quality with the durum wheat "fine selected" of the Apulia sunny hills. From that day the watchword has been: "PASTA OF FIRST QUALITY SIGNED WITH NAME AND SURNAME!"
The Family tradition is never broken up: nowadays pasta is still produced with mixtures of semolinas of durum wheats, in the same plant advisably renovated for preserving, spitefully, the same original method.
The workmanship process, the "Delicate Method" (extended cool kneading, slow wheat selection, pressing and wire drawing, and finally drying to low temperature), continuous to assure the typical taste to our pasta from the best durum wheat and a strong stiffness but…absolutely natural! At the same time it allows to preserve the precious biological and nourishing values of the good durum wheat (carbohydrates and vegetable proteins), the Mediterranean Diet base.
