INGREDIENTS:
- 4 great abergines;
- 500 g of minced meat;
- 150 g of grated cheese (pecorino and/or parmesan cheese);
-100 g of mozzarella;
- An egg;
- A small bundle of parsley;
- A garlic;
- Tomato in pieces;
- Two big potatoes;
- Extra-virgin olive oil;
- Salt.
PREPARATION:
Wash and clean the abergines; cut them in two pieces along the long side and make them empty to the inside. Cut to small bits the removed abergines and fry them in a great frying pan in the oil together with the minced meat. Add the tomato in pieces, the grated cheese, the egg, the mozzarella and the salt. Fill the emptied abergines with the stuffing and set in a baking-pan on a layer of oil and salt. Season with bits of tomato, cut potatoes, garlic, parsley and bake for 20 minutes, until when the stuffing will show a pastry.
