BOILED LAMPASCIONI

Vegetables and legumes

INGREDIENTS:
- 500 gs of lampascioni;
- Extra-virgin olive oil;
- Salt and pepper.

PREPARATION:
Premised that the lampascioni are wild bulbs from the bitterish taste that you grow spontaneously in the uncultivated grounds.

After having cleaned the lampascioni, wash them repeatedly. To avoid an excessive bitter taste, leave them in fresh water a whole night and rinse later them the day. Boil them in salty hot water until when they are cooked and drain them.
Servd them warm, slightly crushed with the fork and seasoned with oil, salt and pepper.
